So in poking about for some more 1GM10 information I came across the following:

The top of the page is about Yanmar Temp Gauges. The bottom was showing a Yamaha outboard temp gauge install. Based on this I am going to try to find the blue/white wire in the harness (everything painted grey) or find where the sensor is located and wire it into my gauge from my old Palmer P60.
So far I have been wiring direct to things rather than using the harness since I do not have the needed connector.
I will report back what I find.
