Spray insulation vs roll-out closed cell

I swear I’ve seen a thread on this before, but cannot find it anywhere so here goes.

my ‘69 35-1 is currently stripped down to a bare glass tube - step 1 of a complete refit. She is a 4 season liveaboard, so I need to insulate. I started with a small roll of 1/2” thick closed cell that I was going to glue to the hull with 3M adhesive spray, but now I’m debating. Is there a better, easier-to-apply option, considering the boat is bare inside at the moment?
Sailing Uma just did that whole ordeal with spray cork, and I can’t gauge how much of that choice was the novelty of the material vs the actual best option for the job.
Anyone here successfully, happily insulted an Ericson? Tips, gotchas for weird hard-to-insulate spots?
Any strong educated opinions greatly appreciated.

Sailing Florence, and English you tube channel, use a rolled out glue down insulation. It worked for them.

Thanks Rick - I'll hunt that channel down. I think that's the way to go - it's somewhat cost-effective and there are examples (like that youtube channel) of it actually holding up.
