The biggest concern is what block system underneath the deck you will use to take the rigging load from the deck and pass it via the tie-rod into the TAFG. The "u-bolt" chainplates are not really chainplates, but are more like passthroughs allowing the rig loads to be transferred from the deck...

Ownership is so rewarding though! It teaches us how to be better, more competent and able people, taking responsibility for the stewardship of something worthy and outside of ourselves--it is much like marriage but with far lower and less permanent stakes.

Garhauer is a great company! They also make chainplate replacement for Ericson boats--I ordered some back in the day and they were a big upgrade.

OP: G10 sheets would be an excellent core material for your purposes--definitely wouldn't recommend plywood or resin alone (brittle). I suggest you do as Nick and Loren have done^.

Curved tempered glass windshields have to be custom made. There is only one company in the world, Ocean Dynamics in Miami, that makes them (custom replacements) for boats. I actually bought a donor boat and then swapped its windshield to replace the broken section. I wrote an article about it...
