Now that we have her out of the water....

Can some one explain to me how the paddle wheel works for speed?
Also the depth finder next to it.

Our paddle wheel is not in good shape, can it be replaced? Do I pull it out from above or below?

Both were so built up with hard crusted growth that they only showed as a hump on the hull and the bottom cleaners never worked on them as they knew something was there but not to mess with it.

Now the wheel goes around and speed shows up on dial, depth meter shows 38 ft. and its on the hard (about 4 ft. off the ground).

The paddle wheel spins. It has a sensor that registers once for every revolution. It sends the impulses to the gauge. The paddle wheel can be replaced. Contact the manufacturer. Probably Datamarine. Ericson used these on lots of their boats. I just bought a set of Raymarines to replace mine. My Datamarines will be for sale but my boat is still in the water and will be for a few more weeks.

Depth uses sonar(radio waves) and will generally not work out of the water or if you have a nest of critters residing on the transducer. If it does show depth on the hard I would be suspect of it.

Ralph, both of these, once cleaned should be painted with transducer paint to prevent future growth. The depth should be fixed in place while the paddle wheel should be remvable from the insde of the boat. There should also be a plug to put in place so you can pull it while in the water and clean it. It will catch grass, seaweed, critters and other crap that will make it inoperable from time to time. When you pull it, have the plug oriented correctly and ready to put in place as a lot of water will gush up through the open fitting. Now that you are on the hard, this is the best time to practice this drill.
