On Freyja the side panelling was screwed on to two pieces of wood each side which were contoured to the hull and fixed to it with epoxy.
That may or may not be relevant to your newer boat.

Can you expand on what panels you are replacing? Cabin sides? Hull ceilings? Other? Can you attach a photo or two?
I ended up using thickened epoxy:

The original paneling was attached using thickened resin and it stayed on for 30+ years (frustratingly good when it came time to remove it), so I figured I'd do the same.
Construction adhesive would also be a good choice. 3M 4200 would probably work, but it's more of a sealant with adhesive properties. You'd be paying for a feature that's not needed in this application.

A friend of mine and I did my cabin sides in white formica. After removing the badly delaminated pieces, I used Bondo to get the surface reasonably fair. I will say that working with Formica is a pain, but I'm very happy with the results.
Mine is currently in-progress. The original plywood peeled off like paper. I replaced with new 1/4" plywood soaked in penetrating epoxy then attached with TotalBoat Thixo. I'm following @Christian Williams idea and painting with Hatteras Off White. Currently they have primer on them. I plan to use some teak battens to cover the seams, so I only had to work with 48" pieces of plywood at once.
