Can you expand on what panels you are replacing? Cabin sides? Hull ceilings? Other? Can you attach a photo or two?replacing the teak sidewalls and reseating all the portlights.
Looks great! I'm learning a lot with this project ( and losing what's left of my hair) I was thinking about the West System SIX10 but was thinking I would need to spread out a lot of it. After seeing your work, I have a clearer understanding and that's the way I think I'll go.I ended up using thickened epoxy:

The original paneling was attached using thickened resin and it stayed on for 30+ years (frustratingly good when it came time to remove it), so I figured I'd do the same.
Construction adhesive would also be a good choice. 3M 4200 would probably work, but it's more of a sealant with adhesive properties. You'd be paying for a feature that's not needed in this application.
