Replaced the engine control cables on Quincy this weekend. Not technically difficult but time consuming. Lots of disassembly and reassembly. Edson 335 pedestal. Yanmar 3YM30 engine. Replaced wheel brake and serviced shaft bearings while in there, not sure how you’d access the cable clamp inside the pedestal without first removing the wheel shaft.
Reason for the work - sticky throttle cable, note corrosion and couldn’t get old seized cable clamp off the cable.
Seized shift cable end offered no adjustment and cable didn't want to fully engage both forward and reverse gears. Also got stuck in gear too often, always at the wrong moment.
Cables were both 17' long, shift cable had an extra turn it it since it doesn't go as far forward. Replaced with a 16' shift and 17' throttle cable. Probably could have gone at least one foot shorter on both of them, still had extra and had to push a turn into the space behind the fuel tank.
It's tight getting the cables run between the steering quadrant and the bottom of the cockpit sole.
Disconnecting the cable clamp inside the pedestal was much easier when the wheel shaft was removed.

Core looks sound at pedestal hole. Pedestal and especially pedestal guard still moves more than I'd like but I can't figure out why. There aren't any real backing plates on the two mounting brackets for the pedestal guard, just washers. Not a great photo but you can just see one bolt, nut, and washer where the black cables route up into the sole. Maybe that's it?
Cleaned bolts at ends of steering cable and treated with tef-gel. Cable and chain looked to be in good shape.

Not as many pics of re-assembly, but seems like it all went back together correctly. I completely removed the ends of the steering cables from the quadrant to clean them up and they were a little tricky to get back in. Had to play with the chain on the sprocket to get the wheel and rudder lined up.
Shift and throttle both feel smoother now, steering as well. Shift is positive both in and out of both forward and reverse gears. May have to adjust the throttle cable at engine end, but it feels and sounds right for now. Before messing with it I want to see how it feels under more load with and with some use.
